  • 1½ cups cooked shredded chicken

  • ⅔ cup shredded mozzarella or Oaxaca/Monterey Jack

3) Black Bean–Corn (V)

  • 1 tbsp olive oil • 1 small onion (chopped) • 1 garlic clove (minced)
  • 1 cup black beans (rinsed, drained) • ¾ cup corn kernels
  • ½ tsp cumin • ½ tsp chili powder • pinch smoked paprika • salt & pepper
  • 2 tbsp chopped cilantro • squeeze of lime
  • Optional: ⅓ cup dairy-free cheese or feta/queso fresco

  1. Make filling (skillet, 8–12 min):

  2. Preheat air fryer: 375°F (190°C) for 3–5 min. Line basket with perforated parchment or lightly oil.
  3. Fill & seal (10–12 min): Place 2–3 tbsp filling in center of each round. Moisten edge with water. Fold over, press seam, crimp with fork. Poke 1–2 small vents.
