- 2 medium eggplants (about 2 lb / 900 g)
- 2β3 tbsp tahini (to taste)
- 2 tbsp fresh lemon juice (1 lemon)
- 1 large garlic clove, roasted or raw (per taste)
- 2 tbsp extra virgin olive oil (plus more to drizzle)
- 3/4 tsp fine sea salt (adjust to taste)

- Roast eggplant: Pierce eggplants all over with a fork. Roast directly over a gas flame (8β10 min, turning) until charred, OR roast at 450Β°F (230Β°C) for 25β30 min until collapsed and soft.
- Scoop & drain: When cool enough, split eggplants, scoop flesh into a strainer. Let sit 10 min to release excess liquid.
- Blend: In Vitamix, add eggplant flesh, tahini, lemon juice, garlic, olive oil, and salt. Blend on Variable 4β5 for 20β30 sec until silky but not paste-like. Taste, adjust salt/lemon/tahini.
