- Mochi dough: 1 cup (120 g) mochiko/glutinous rice flour • 3/4 cup (180 ml) water • 1/4 cup (50 g) sugar
- Dusting: 1/2 cup potato/cornstarch (for hands + board)
- Fill: 1 large ripe peach (peeled, 8 neat wedges or 1/2-inch cubes)
- Base (choose one, ~8 tsp total): sweet white bean paste (shiroan) • lightly sweetened mascarpone/yogurt-cream • firm jam/preserves
- Optional aroma: 1/4 tsp vanilla or 1–2 drops almond/peach extract
✍️ Method
- Prep fruit: Pat peach pieces dry (very important for sealing).
- Mix mochi: In a microwave-safe bowl, whisk mochiko, sugar, water (and optional aroma) until smooth.
- Cook: Microwave covered 1 min; stir. Microwave 1 min; stir (it thickens). Microwave 30–60 sec more until glossy, elastic, and slightly translucent.
- Cool & dust: Heavily dust a board with starch. Scoop hot mochi onto it; dust top. Cool 2–3 min until warm but workable.
- Portion: Pat into a 1/4 in (6 mm) sheet. Cut into 8 squares (or pinch 8 golf-ball portions).
- Fill & seal: For each piece, dust hands, flatten to a 3–3.5 in circle. Add 1 tsp base + peach piece. Stretch edges over filling; pinch to seal. Place seam-side down in a starch-dusted liner.
- Set: Rest 10 min; lightly brush off excess starch before serving.
