🥣 What It Is
Stir-fried wheat noodles with cabbage and carrot in a glossy yakisoba sauce; optional pork or tofu; finished with scallion, aonori, and beni shōga.
🧾 Ingredients (serves 2)
- Noodles: 2 packs (300–360 g total) steamed yakisoba or fresh chukamen (loosened)
- Veg: 2 cups finely sliced cabbage • 1 small carrot (matchsticks) • 3 scallions (sliced)
- Aromatics: 1 tbsp neutral oil • 1 tsp grated ginger • 1 small garlic clove, minced
- Protein (optional): 150 g thin-sliced pork belly or 200 g firm tofu strips
- Yakisoba Sauce: 2 tbsp Worcestershire • 1½ tbsp soy sauce • 1 tbsp oyster sauce (or mushroom “oyster” for veg) • 1 tbsp ketchup • 1–2 tsp sugar or mirin
- Finish: Aonori (seaweed flakes) • beni shōga (pickled ginger) • toasted sesame (optional)
✍️ Method
- Prep noodles: If using bagged steamed noodles, open and loosen by hand. If stiff, splash with 1–2 tsp water and microwave 20–30 sec.
- Sauce: Stir together Worcestershire, soy, oyster, ketchup, sugar/mirin.
- Sear protein: Heat wok on high with oil. Add pork (or tofu); sear 2–3 min until browned. Push to side.
- Veg + aromatics: Add cabbage, carrot, ginger, garlic; stir-fry 1–2 min until crisp-tender.
- Noodles in: Add noodles; toss 60–90 sec to pick up heat and slight wok char.
- Sauce & gloss: Pour sauce around the pan’s edges; toss 1–2 min until glossy and evenly coated. Fold in most scallions.
- Finish: Plate. Top with aonori, beni shōga, sesame, and remaining scallions. Serve hot.
