Chilled sugarcane lemonade served over ice; optionally spiked with white rum, tequila blanco, or vodka. Mint is a nice flourish; not required.
π§Ύ Ingredients (2 tall glasses)
- Sugarcane base: 12β14 oz (360β420 ml) cold sugarcane juice OR substitute below
- Citrus: 3 tbsp (45 ml) fresh lemon juice (or lime) + 1/2 tsp fine zest (optional)
- Pinch: 1 small pinch fine salt
- Water: 1/2β3/4 cup (120β180 ml) cold still or sparkling water (to taste)
- Ice: Plenty
- Spike (optional): 2β3 oz (60β90 ml) white rum, tequila blanco, or vodka (1β1.5 oz per glass)
- Finish (optional): 6β8 fresh mint leaves β’ lemon wheels β’ thin cane sugar rim
Substitute if no sugarcane juice: Mix 1/4 cup (50 g) light panela/piloncillo or light brown sugar + 1/4 cup (60 ml) hot water to dissolve; cool. Whisk in 1/2 tsp molasses + 3/4 cup (180 ml) cold water to mimic cane flavor. Use in place of sugarcane juice.

- Build base: In a pitcher, combine sugarcane juice, lemon juice (and zest if using), and a tiny pinch of salt. Stir.
- Adjust: Add cold water (still or sparkling) to taste. You want bright but not sour; grassy but not heavy.
- Serve: Fill two tall glasses with ice. Non-alcoholic: pour and garnish with mint + lemon wheel.
- Spike (optional): Add 1β1.5 oz spirit to each glass (rum/tequila/vodka), then top with lemonade. Stir gently. Cheers.
