- 2 bolillo or telera rolls (or soft baguette sections)
- 1 cup warm refried beans (black or pinto)
- 4–6 oz melting cheese (Oaxaca, Jack, or mozzarella)
- 1 ripe avocado, sliced • 1 tomato, sliced • red onion, thin rings
- Pickled jalapeños • shredded lettuce
- 2–3 tbsp mayo or crema • salsa roja or verde • lime wedges
- Optional: 2 fried eggs or 1 cup crispy tofu slices
✍️ Method (air fryer quick-press)
- Prep bread: Split rolls. Spread thin mayo/crema on cut sides.
- Layer hot side: Bottom halves → beans → cheese. Air fry 375°F / 190°C for 4–6 min until melty and toasted (or skillet, covered).
- Finish fresh: Top with avocado, tomato, onion, jalapeños, lettuce, salsa, and optional egg/tofu. Squeeze lime.
- Close & set: Cap with tops; return to fryer 1 min to warm through. Press gently and serve.
