- Optional protein: 1 cup crispy tofu cubes

- Toss: Add noodles + sauce; toss 1β2 min until glossy. Fold in snap peas/pepper and tofu (if using) 1 min.
- Finish: Off heat, fold in mango and most herbs. Plate with peanuts, scallions, and extra lime.
