🥣 What It Is
Tofu cubes crisped in the air fryer, brushed in a warm Nashville hot oil, then flashed to set a ruby lacquer. Cool with pickles & herbs.
🧾 Ingredients (serves 2)
- Tofu: 14 oz (400 g) firm tofu, pressed 20–30 min, cut into 1 in / 2.5 cm cubes
- Crisp Coat: 1 tsp (5 ml) oil • 1–1½ tsp (3–5 g) cornstarch • ½ tsp garlic powder • ¼ tsp salt • black pepper
- Nashville Hot Oil (glaze): 3 tbsp (45 ml) neutral oil • 1½–2 tsp cayenne pepper (to heat) • 1 tsp smoked paprika • ½ tsp garlic powder • ½ tsp brown sugar or honey • ¼ tsp kosher salt • pinch black pepper
- Finish: Sliced pickles • chopped parsley or chives • lemon wedge (optional)
- Veg (optional for skewers): Red onion petals • bell pepper chunks
✍️ Method (Air Fryer default)
- Prep & coat: Pat tofu dry. Toss with oil, cornstarch, garlic powder, salt, pepper. Skewer with veg if desired.
- Air fry (crisp): Preheat to 380°F / 193°C for 3 min. Arrange in single layer on parchment/foil sling. Cook 10–12 min, shaking/turning at 6 min, until edges are golden and firm.
- Make hot oil: Warm oil over low heat. Whisk in cayenne, smoked paprika, garlic powder, brown sugar/honey, salt, pepper until brick-red and fragrant (30–60 sec). Remove from heat.
- Glaze & set: Brush or toss hot tofu with Nashville oil to coat. Return to fryer 1–2 min to lacquer.
- Serve: Top with herbs, add pickles (and a lemon squeeze if you like). Eat hot.
🌿 Maker’s Notes
- Heat control: Start at 1½ tsp cayenne; go 2 tsp for choir-of-fire levels.
- Slightly saucy: Whisk 1–2 tsp hot water into the oil for a thinner brush-on.
- Other devices: Oven 425°F / 220°C 15–18 min (flip once); brush hot oil, broil 30–45 sec. Grill med-high 8–10 min; brush oil and sear 30 sec per side.
