✍️ Method (15–20 min)
- Prep fryer: Preheat air fryer to 380°F (193°C) for 3–4 minutes.
- Butterfly tails: Using kitchen shears, cut the top shell lengthwise to the tail fan. Gently loosen the meat from the shell, lift it up to rest on top (piggyback), keeping the end attached. Remove any vein; pat very dry.
- Season: Stir your butter choice. Brush ~half over the exposed meat; lightly salt/pepper.
- Air-fry: Place tails in basket, meat-side up. Cook 6–8 minutes for 5–6 oz tails or 8–10 minutes for 7–8 oz tails, until meat is opaque and just firm and the thickest part reads 140–145°F (60–63°C).
