- Crab Cake Mix:
- 1 lb (450 g) lump crab meat, picked over for shells
- 1 large egg, lightly beaten
- 3 tbsp mayonnaise or thick Greek yogurt
- 1 tsp Dijon mustard • 1 tsp Worcestershire (or coconut aminos)
- 1–1½ tsp Old Bay (or 1 tsp paprika + ½ tsp celery salt)
- 2 tbsp finely chopped parsley • 1–2 scallions, thinly sliced
- 1 tsp lemon zest • 1–2 tsp lemon juice
- ⅓ cup panko breadcrumbs or crushed saltines (GF/low-carb: ¼ cup almond flour + 1 tbsp ground flax)
- ¼ tsp fine sea salt • ⅛ tsp black pepper
- For Air-Frying: 1–2 tsp olive oil (spray or brush), perforated parchment (optional)

✍️ Method (35–45 min)
- Mix gently: In a large bowl whisk egg, mayo/yogurt, Dijon, Worcestershire, Old Bay, parsley, scallions, lemon zest/juice, salt & pepper.
Fold in crab and crumbs gently just until it holds together (avoid breaking lumps). - Shape & chill: Scoop and form 6–8 tight patties (~½–¾ inch thick). Place on a parchment-lined tray. Chill 15–20 minutes to set.
- Preheat fryer: Heat air fryer to 400°F (200°C) for 3–5 minutes. Line basket with perforated parchment or lightly oil.
- Air-fry (batch): Lightly oil tops of cakes. Arrange without crowding. Cook 8–10 minutes, flipping at 6 minutes, until deep golden and hot through (center about 145°F / 63°C). Thicker cakes may need +1–2 minutes.
- Sauce & serve: Stir remoulade ingredients. Serve crab cakes hot with sauce and lemon wedges; sprinkle parsley.
