The Wanderer brings flavors across borders. Donair, born of Middle Eastern shawarma and reborn in Halifax, carries both memory and invention. Spiced beef shaved from a vertical spit, folded into pita, finished with onions, tomatoes, and the signature sweet-garlic sauce—it’s a dish that tells of travel, adaptation, and belonging in a new land.

Meat

Method

  1. Meat: Mix beef with spices. Knead well, form into a tight loaf. Bake at 180°C / 350°F for 1 hour, flipping halfway. Cool slightly, then shave thin slices.
  2. Sauce: Whisk evaporated milk, sugar, and garlic powder. Stir in vinegar last—mixture will thicken slightly.
  3. Assemble: Warm pita, layer meat, onion, tomato, drizzle generously with sweet-garlic sauce. Wrap tight in foil or parchment.

Craft cues: Too dry? Knead meat longer for density. Sauce too thin? Chill briefly after vinegar. Want more Halifax authenticity? Char shaved slices briefly on a hot skillet before wrapping.

📜 History & Lore

The donair was introduced to Halifax, Nova Scotia in the 1970s by Greek immigrant Peter Gamoulakos. Adapting the gyro to local tastes, he replaced lamb with beef and tzatziki with the now-famous sweet-garlic sauce. What began as a late-night street food became the official food of Halifax in 2015. To this day, it is both nostalgia and novelty, a dish tied to place and migration, carrying the Wanderer’s story in every bite.
