🧾 Recipe (30–35 loukoumades)
Ingredients
- 500 g (4 cups) all-purpose flour
- 7 g (2¼ tsp) instant yeast
- 1 tbsp sugar
- ½ tsp salt
- 450 ml (scant 2 cups) lukewarm water
- 2 tbsp olive oil
- Neutral oil for deep frying
- Syrup & finish: 200 g (1 cup) honey, 60 ml (¼ cup) water, 1 stick cinnamon, zest of ½ lemon or orange
- Cinnamon powder & crushed walnuts or sesame seeds (for garnish)
Method
- Batter: Mix flour, yeast, sugar, salt. Add water + olive oil; whisk to a sticky, thick batter. Cover and rise 1–1.5 hours, until doubled.
- Syrup: Heat honey, water, cinnamon, zest until just simmering. Remove from heat; keep warm.
- Fry: Heat oil to 175°C / 350°F. With oiled hands or spoons, drop small batter balls into oil. Fry 3–4 min until deep golden, turning.
- Finish: Drain on rack, then dip hot loukoumades straight into warm honey syrup. Pile high; sprinkle with cinnamon and walnuts/sesame.
Craft cues: Too dense? Batter not risen enough. Greasy? Oil too cool. Want crunch? Double fry (first at 160°C, then 190°C). Serve immediately—loukoumades are joy in the moment.
