- Fold: Sift flour, almonds, salt in. Add zest + extracts. Loosen with milk + cream until batter drops softly.
- Fruit: Toss currants in 1 tsp flour; fold through gently.
- Bake: 40–45 min, golden and springy. Cool 10 min; lift to rack.
- Glaze: Mix icing sugar + lemon juice; drizzle warm cake so it sets glossy.
