🧾 What You Need (Makes 6–8 medium cachapas)

  • Corn batter:
    • 5 cups sweet corn kernels (about 6 ears) or 4 cups thawed, well-drained frozen
    • 2 large eggs
    • 1/2 cup whole milk (or evaporated milk for extra body)
    • 2–4 tbsp sugar or grated papelón (to taste)
    • 2 tbsp melted butter or neutral oil
    • 1 tsp fine sea salt
    • 1 tsp baking powder
    • 1/3 cup pre-cooked yellow cornmeal (harina de maíz precocida, e.g., P.A.N.); plus 1–2 tbsp more if needed to thicken
  • For the embrace: 12–14 oz queso de mano (classic) or fresh mozzarella/Oaxaca (sliced)
  • 2–3 tbsp soft butter (for finishing)
  • Optional companions: nata criolla (or sour cream/crema), ripe avocado, thin ham slices, tajadas (fried sweet plantain)
  • Quick Guasacaca (sauce): 1 ripe avocado • 1/2 cup cilantro • 1/2 cup parsley • 1 garlic clove • 1–2 tbsp white vinegar • 1 tbsp lime juice • 3 tbsp oil • salt
  • Papelón syrup (optional): 1/3 cup grated panela + 3 tbsp water, warmed to dissolve

📜 Forging the Corn Embrace

  1. Blend the base: In a blender, combine half the corn with eggs, milk, sugar, melted butter, and salt. Blend smooth. Add remaining corn; pulse just a few times to keep some texture.
  2. Thicken & rest: Add baking powder and pre-cooked cornmeal; blend briefly to a thick, pourable batter (like pancake batter with texture). If thin, pulse in 1–2 tbsp more cornmeal. Rest 10 minutes to hydrate.
  3. Heat the griddle: Lightly oil a nonstick pan or cast-iron griddle over medium heat. Aim for a gentle sizzle, not smoke.
  4. Pour & bronze: Ladle ~1/3 cup batter; spread to a 5–6 in (12–15 cm) round. Cook 3–4 minutes until edges set and underside is deep golden. Flip carefully; cook 2–3 minutes more.
