- 2–4 tbsp sugar or grated papelón (to taste)
- 2 tbsp melted butter or neutral oil
- 1 tsp fine sea salt
- 1 tsp baking powder
- 1/3 cup pre-cooked yellow cornmeal (harina de maíz precocida, e.g., P.A.N.); plus 1–2 tbsp more if needed to thicken
- For the embrace: 12–14 oz queso de mano (classic) or fresh mozzarella/Oaxaca (sliced)
- 2–3 tbsp soft butter (for finishing)
