🧾 What You Need (Makes ~1 quart / 1 liter)

  • Fresh corn: 4 ears, kernels cut, cobs reserved (scrape “milk” from cobs)
  • Dairy: 2 cups (480 ml) heavy cream • 1½ cups (360 ml) whole milk
  • Sweet & Season: ¾ cup (150 g) sugar • 2 tbsp honey or maple • ½ tsp fine sea salt

  2. Blend & strain: Fish out cobs. Blend the hot mixture briefly (10–15 sec) to release flavor without fibrous texture. Strain through a fine mesh, pressing gently. Return the silky corn dairy to the pot.
  3. Build the custard: In a bowl, whisk yolks with remaining sugar, honey/maple, and salt. Slowly ladle in hot corn dairy to temper. Return all to the pot; cook on low, stirring with a spatula, until 170–175°F / 77–79°C and it coats the spatula.
  4. Finish & chill: Off heat, stir in vanilla (and miso, if using). Strain once more for satin texture. Chill over an ice bath, then cover and cure in the fridge 4–12 hours (flavor deepens; texture refines).
  5. Churn: Freeze in your ice-cream maker until soft-serve thick. For a ripple, fold in cooled blueberry–lime compote in ribbons. Pack into a chilled pan; press parchment on the surface. Ripen in freezer 4 hours.

    • Blueberry–Lime Ripple: Simmer blueberries, sugar, zest, juice, and pinch salt 3–5 min to syrupy. Cool completely.
