Prawn Masala is a bold, coastal curry beloved in Indiaβs western and southern shores. This version is made with clean, deveined prawns and simmered in a thick masala of tomatoes, ginger, coconut cream, and digestive-healing spices. π Prawn Masala Recipe
- 400g wild prawns, cleaned + deveined
- 1 tbsp cold-pressed coconut oil
- 1 tsp mustard seeds
- 1/2 red onion, finely chopped
- 1 tsp ginger-garlic paste
- 1/2 tsp turmeric, 1/2 tsp chili powder, 1 tsp coriander powder
- 1/2 cup pureed tomato
- 1/3 cup coconut cream
- 1/2 tsp fennel powder + 1 tsp moringa leaf powder (optional)
- Pink salt, to taste
- Fresh curry leaves + cilantro for garnish

- πΏ Heat oil in a pan. Add mustard seeds, let them pop.
- π§ Add onions, sautΓ© until golden. Add ginger-garlic paste and fry until fragrant.
- π Stir in tomatoes and spices. Cook till masala thickens and oil separates.
- π₯₯ Add prawns and stir well. Cook 5β7 minutes max β until they curl and turn pink.
- π Finish with coconut cream, fennel, moringa. Simmer 2 more minutes.
