  • 2–3 tilapia fillets, cut into thick strips or chunks
  • 1/2 tsp turmeric
  • 1 tsp Kashmiri chili powder (for deep red)

  • 1/2 tsp salt
  • Juice of 1/2 lime or lemon
  • 1 tbsp thick yogurt or coconut milk

  • 1/4 cup rice flour
  • 2 tbsp chickpea flour (besan)
  • 2 tbsp cornstarch or arrowroot
  • 1 tsp ginger-garlic paste
  • 1/2 tsp cumin + 1/2 tsp garam masala

  • 1 tbsp coconut oil
  • 1/2 tsp mustard seeds
  • 1 green chili, slit
  • 8–10 fresh curry leaves
  • Optional: 1/4 tsp fennel or asafoetida

  1. Marinate fish with turmeric, chili, pepper, yogurt, lime juice (20 min)
  2. Mix dry ingredients into thick batter
  3. Coat each piece of tilapia gently but completely
  4. Heat oil. Fry fish 3–4 mins per side until golden-red and crisp
  5. Drain and temper: coconut oil, mustard, curry leaves, chili. Drizzle over
