- 1 small head cauliflower, cut into bite-sized florets
- 1/2 tsp salt
- 1/2 tsp turmeric
- 1/2 tsp chili powder
- Juice of 1/2 lime

- 1/4 cup rice flour
- 1/4 cup chickpea flour (besan)
- 2 tbsp corn starch
- 1/2 tsp garam masala
- 1 tsp Kashmiri chili powder (for color + mild heat)
- 1 tsp ginger-garlic paste
- Water to make thick coating batter
🔥 Tempering Oil (Optional but Divine)
- 1 tbsp coconut or sesame oil
- 6–8 fresh curry leaves
- 1/2 tsp mustard seeds
- 1 green chili, slit
✨ Directions
- Blanch cauliflower in salted water for 2 mins. Drain and dry completely.
- Marinate in salt, turmeric, chili, and lime juice for 10 mins.
- Whisk batter. Coat florets fully. Let sit 2–3 mins to bind.
- Heat oil in deep pan. Fry florets in batches until deep red-gold and crisp (3–4 mins).
- Drain. In small pan, heat oil and add mustard seeds, curry leaves, green chili. Pour over fried florets.
