🥦 Ingredients — The Cauli

  • 1 small head cauliflower, cut into bite-sized florets
  • 1/2 tsp salt
  • 1/2 tsp turmeric
  • 1/2 tsp chili powder
  • Juice of 1/2 lime

🌶️ Batter & Coating

  • 1/4 cup rice flour
  • 1/4 cup chickpea flour (besan)
  • 2 tbsp corn starch
  • 1/2 tsp garam masala
  • 1 tsp Kashmiri chili powder (for color + mild heat)
  • 1 tsp ginger-garlic paste
  • Water to make thick coating batter

🔥 Tempering Oil (Optional but Divine)

  • 1 tbsp coconut or sesame oil
  • 6–8 fresh curry leaves
  • 1/2 tsp mustard seeds
  • 1 green chili, slit

✨ Directions

  1. Blanch cauliflower in salted water for 2 mins. Drain and dry completely.
  2. Marinate in salt, turmeric, chili, and lime juice for 10 mins.
  3. Whisk batter. Coat florets fully. Let sit 2–3 mins to bind.
  4. Heat oil in deep pan. Fry florets in batches until deep red-gold and crisp (3–4 mins).
  5. Drain. In small pan, heat oil and add mustard seeds, curry leaves, green chili. Pour over fried florets.
