Ingredients

  • 1 tbsp ginger-garlic paste
  • 1/2 tsp turmeric + 1/2 tsp coriander powder
  • 1 tsp chili powder (or Kashmiri chili for gentle heat)
  • 1 cup coconut milk (full fat)
  • 1/2 cup thin coconut water or broth
  • 10–12 curry leaves (or holy basil sub)
  • 1 tsp apple cider vinegar or kokum for tang
  • Pink salt to taste
  • Adaptogens: 1/4 tsp ashwagandha, 1/4 tsp turmeric root, pinch black pepper, fennel seed

Instructions

  1. 1. Heat coconut oil in clay pot or skillet. Add mustard seeds and let pop (or skip).
  2. 2. Sauté onion or fennel until soft. Add ginger-garlic paste, cook 1 min.
  3. 3. Add turmeric, coriander, chili powder, and adaptogens. Stir gently for bloom.
  4. 4. Pour in coconut milk and water. Stir. Simmer 5 min on low heat.
  5. 5. Slide in kingfish pieces. Simmer covered 10–12 min until just cooked.
  6. 6. Add curry leaves and vinegar/kokum. Simmer final 3 min.
  7. 7. Rest covered 5 min. Serve over red rice, millet, or healing mash.
