Instructions

Step 1: Prepare the Idiyappam

1. In a bowl, mix rice flour and salt.

2. Gradually add hot water, stirring with a spoon until a soft dough forms.

3. Knead the dough until smooth, then place it in an idiyappam press (string hopper maker).

4. Press the dough into thin strands onto greased idli plates or banana leaves.

5. Steam for 8-10 minutes until soft and cooked through. Garnish with grated coconut, if desired.

Step 2: Make the Spicy Kerala-Style Potato Curry

1. Heat coconut oil in a pan and add mustard seeds. Let them splutter.
