HUMMUS WITH MEAT

Halal Meat Hummus with Fresh Pita Bread

History & Lore

Hummus, a staple of Middle Eastern cuisine, has been enjoyed for centuries, its origins debated between various countries in the region. Traditionally made with chickpeas, tahini, and olive oil, it has evolved into numerous variations, often served with fresh bread as a hearty and satisfying appetizer or main dish. In this version, halal meat is added to elevate the dish, offering a rich, savory contrast to the creamy hummus base. The combination of tender spiced halal meat and the smooth, earthy flavor of hummus is complemented perfectly by warm, soft pita bread, making this dish a comforting and fulfilling meal.

Recipe: Halal Meat Hummus with Fresh Pita Bread

Ingredients (Serves 4)

For the Hummus:

• 1 can chickpeas (or 1 ½ cups cooked chickpeas)

• 1/4 cup tahini

• 2 tbsp olive oil

• 2 tbsp lemon juice

• 1 garlic clove (minced)

• Salt to taste

• 1/2 tsp ground cumin

• 1/2 tsp paprika (for garnish)

For the Halal Meat:

• 1 lb halal ground lamb or beef

• 1 medium onion (finely chopped)

• 2 garlic cloves (minced)

• 1 tsp ground cumin

• 1 tsp ground coriander

• 1/2 tsp ground cinnamon

• 1/2 tsp paprika

• 1 tbsp olive oil

• Salt and pepper to taste

For the Fresh Pita Bread:

• 4 pita bread rounds (store-bought or homemade)

• Olive oil (for brushing)

• Fresh parsley (for garnish)

Instructions

1. Prepare the Hummus:

• In a food processor, combine chickpeas, tahini, olive oil, lemon juice, garlic, salt, and cumin. Blend until smooth and creamy. If the mixture is too thick, add a little water to reach desired consistency. Transfer to a serving dish and sprinkle with paprika for garnish.

2. Cook the Halal Meat:

• In a large pan, heat olive oil over medium heat. Add onions and sauté until soft and translucent. Add garlic and cook for another 1-2 minutes.

• Add the ground halal meat, breaking it apart with a spoon as it cooks. Stir in the cumin, coriander, cinnamon, paprika, salt, and pepper. Cook until the meat is browned and cooked through, about 8-10 minutes. Set aside.

3. Prepare the Pita Bread:

• Lightly brush the pita bread with olive oil and warm them in a skillet or oven until soft and warm.

4. Assemble the Dish:

• Spread the hummus onto a large serving platter. Top with the cooked halal meat, spreading it evenly over the hummus. Garnish with fresh parsley and a drizzle of olive oil. Serve with the fresh pita bread on the side for dipping.
