Custard
History & Lore
Custard, one of the most ancient of desserts, dates back to medieval Europe, where it was first recorded as a rich, egg-based filling for tarts and pies. Over centuries, the recipe evolved, with custard becoming a beloved treat in various cultures. The French perfected their custard techniques with crème anglaise, a smooth, pourable version, while the English developed a thicker, more spoonable variety often served as a stand-alone dessert. This creamy, sweet dish remains a timeless classic, favored for its simplicity and versatility.
Recipe: Classic Custard
Ingredients (Serves 4)
• 2 cups whole milk
• 1/2 cup granulated sugar
• 4 large egg yolks
• 1 tsp vanilla extract
• 1 tbsp cornstarch (optional for thickening)
• Pinch of salt
Instructions
1. Heat the milk: In a medium saucepan, heat the whole milk over medium heat until it just begins to simmer. Do not let it boil.
2. Whisk the egg yolks: While the milk is heating, whisk the egg yolks, sugar, cornstarch (if using), and a pinch of salt in a bowl until the mixture is smooth and pale.
3. Temper the eggs: Gradually pour a small amount of the hot milk into the egg mixture, whisking constantly to avoid curdling. Slowly add the rest of the milk while continuing to whisk.
4. Cook the custard: Pour the egg mixture back into the saucepan and cook over low heat, stirring constantly until the custard thickens to the consistency of heavy cream (about 5-7 minutes).
5. Strain & Cool: If you desire a perfectly smooth custard, strain the mixture through a fine-mesh sieve into a bowl to remove any cooked egg bits. Stir in vanilla extract and let the custard cool to room temperature.
6. Serve: Serve the custard warm or chilled. It can be enjoyed on its own or as a topping for fruit, cakes, or pies.
